I can't find mine either, but maybe I can answer your question.
I am going to assume you can set the time and set up a program to record, you just can't get it to record it.
I believe you are going to need the original remote and not a universal because there are two different 'record' buttons on the remote.
'REC/OSD' or something like that, (I'm at work and my VCR is at home) only records what you are watching as you watch it.
Near the bottom of the remote is another button, 'TIME REC' or something along those lines.
What you need to do is go to the MENU screen and set up your desired program to record. It's pretty easy, just hit enter and the up and down keys by the MENU button to scroll through it. When the next line starts flashing, hit the TIME/REC button. This should throw the VCR into RECORD mode and it shuts off. The REC LED should be lit on the front panel.

I don't normally use this VCR to record stuff, so I am not sure if you can watch other programs until the recording is over or not.
